And it’s as chocolatey as cookies can get with the help of both cacao powder and chocolate chips—something that turns it into more of a cookie-brownie hybrid. Similar to kosher law in general, many people who observe Passover range in how they practice their observance when it comes to meal time. Some avoid using any processed foods not specifically marked “kosher for passover,” and others simply avoid hametz, which are grains including wheat, rye, spelt, barley, and oats. So, these grain-free cookies are a serious win for a Passover dessert.

Whipping up a batch only requires 15 minutes, seven ingredients, and one bowl. After mixing all the ingredients, which include almond butter, maple syrup, almond meal, cacao, eggs (use applesauce as a replacement to make them vegan), chocolate chips, and sea salt, just scoop the dough onto a baking sheet with a spoon. They’re ready to eat hot our of the over, but should keep in an airtight container for up to a week. You can also keep them in the freezer for up to three months so you always have a treat on hand.

Once you set them on the baked goods table, there’s no going back. It only takes one bite before you’ll want some more.
